Heh Ya Kay Char Bak

シンガポールへ2ヶ月前に旅行したさい、チンチャロをお土産に購入した。チンチャロはディップとして旨いと思っていたが、いったいこれで何の料理が出来るのかを考えた。色々、調べた結果、なんとも人類の考える事は国境を越えてしまうのだと感動を覚える。もともとチンチャロは韓国の発酵した網エビの塩辛と良く似ている。先月、ソウルを訪れた時に、いたるところにこの網エビの塩辛が提供されていた、まさにチンチャロのように。そして必ず一緒に食べるたのが、蒸豚である。網エビの塩辛の独特な深みのある塩分が豚の脂にすこぶる合う。ノニャ料理の決定版といっていいほどの本を私は持っている。これに出ていたが、ヘイヤッケー・チャー・バッ(ク)だ。ヘイヤッケーは福建語でチンチャロの事でチャーは炒める、そしてバックは豚を意味する。にんにくとチンチャロを炒めた後に、柔らかく蒸した豚バラを赤唐辛子と青唐辛子で炒めるだけ。塩はチンチャロの塩分で十分だ。ソウルで食べた料理同様、良く似ていて旨い。

Pig's Organ Soup @ Koh Brother Tiong Bahru 猪什湯


I love spare parts, namely, organ meats like liver, kidney, heart, intestine, lungs, brains etc. -the list goes on. I have two favorite places in Tokyo that serve pork spare parts -yakitori style and they are just fantastic -the texture and the flavor contrast are out of this world! Anyways, I came across this pig's organ soup (Teochew dish) in Tiong Bahru and apparently pig's organ soup stalls are becoming an "endangered species." Main reason: "prepping organ meats are an incredibly laborious task." If this is a dying art, what a pity because the soup was wonderful. Imagine slightly light bak kut teh broth with kiam chye, pork meatballs, pork slices, pork intestine, liver and stomach slices without any of the off-taste which results from insufficient prepping. With a tangy chilli sauce and bowl of steamed rice, pig's organ soup is like a organ meat treasure box(ホルモンの宝石箱や~).
私は豚のホルモンが大好きである。そのせいで通風になったのかもしれない。肉骨茶も大好きだ。この二つが合わさった時、私は最高の幸せに包まれるに違いない。それを味わったのが、ティオン・バルのフードセンターにある創業1950年の「許兄弟猪什湯」。肉骨茶のようなクリア(Cheng)なスープにほのかな白胡椒の風味と爽やかなキャム・チャイの酸味。具は、シロ(胃腸)・マメ(肝臓)・レバー・豚スライス・肉団子が入っている。ホルモンは臭みもなく、酸味の効いたチリソースとホルモンが良く合うのだ。

Kiam Chye and Kimchi

I have this wonderful book on kimchi: Kimchi, Thousand Years (Design House Publishers Inc. 1997) by Kim Man-Jo, Lee Kyou Tae, Lee O-Young and traslation by Gary Rector, ISBN: 89-7041-067-8. In my personal opinion, if one wants to know the A-Z of Kimchi, this is the best book ever written on kimchi. There is a chapter "The Origins and History of Kimchi" written by Kim Man-jo which states the etymology of the word kimchi. The author "believes it is derived from a combination of two Chinese characters meaning 'salted vegetables'... The Chinese character which means 'salted vegetable' is 鹹菜 (traditional Chinese)or 咸菜(simplified Chinese). The transition from 鹹菜 to 沈菜 is unclear. By the way 沈菜, pronounced "ch'mch'ae", is the proper Chinese character for kimchi to date.

キャム・チャイの発音がキムチに似ている事から、なにか共通点はあるのではないかと、私の食ライブラリーコレクションにあるキムチの歴史本: Thousand Years (Design House Publishers Inc. 1997) by Kim Man-Jo, Lee Kyou Tae, Lee O-Young and traslation by Gary Rector, ISBN: 89-7041-067-8をもっと詳しく読んでみた。共通点があると私は推測する。というのも、もっとも基礎的な食材の保存方法は塩漬けだからだ。ちなみに、キムチについてこれほど素晴らしい書物は他にはないであろう。キムチが大好きで、英語の読める人には非常にお勧めだ。さて、キャム・チャイは繁体字で書くと「鹹菜」又は、簡体字で「咸菜」と書きます。キアム・チャイの発音はそもそも潮州・福建語で、広東読みになるとハーム・チョイ。Dr. Kim Man-jo氏によると:「キムチという言葉の語源は(塩漬け=鹹)そして(野菜=菜)という二つの中国漢字(鹹菜)からきているのではないか」と推測している。しかし、現在キムチを漢字で書くと「沈菜」と書く。この本には、なんで「鹹菜」から現在の「沈菜」になったのかは明らかにしていない。そこがポイントだったりするのだが・・・う~む。

Thosai, Dosai, Dosa, Dosay -S. Indian Tiffin



It's great that there are numerous places one could eat thosai (a.k.a. dosai, dosa, dosay) in Tokyo nowadays. I was immediately hooked on this S. Indian crepe (which is usually eaten as a breakfast or snack), when I had an incredibly tasty one in Singapore's Little India, introduced to me by my fellow foodie Mr. W. Indian cuisine (especially S. Indian cuisine) used to be all mysterious to a Japanese like me, but sooner, I found out that making your own thosai is truly rewarding and nothing mysterious. The crepe is a thin batter made from soaked urad dhal (type of lentils), rice and fenugreek (for flavor). You need to soak these in warm water for few hours, then puree them in a blender. After mixing them together, rest the batter at warm place for 8 hrs. depending on room temperature. The batter will ferment going through lactic fermentation yielding in a tangy batter. Pics from top (thosai with coconut chutney, mint/pudina chutney, onion-chilli chutney, and sambhar-spicy lentil & vegetable stew). All chutneys use popped black mustard seed -meaning mustard seeds are popped in hot oil for toasty flavor. I used popped urad dahl, cumin seeds, curry leaves in coconut chutney for flavor and texture. They're like mexican salsa -excellent condiments. BTW, tiffin (pronounced tifun in S. India but pronounced tiffin in singapore) refers to south Indian light afternoon snack, namely munchies, but nowadays tiffin is eaten from morning to early evening. According to K.T. Achaya, A Historical Dictionary of Indian Food, Oxford University Press, New Delhi, 1998: "The word tiffin itself is a colloquial English term, which comes from the word tiffing for eating or drinking out of mealtimes, and the word tiff, which was to eat the midday meal. References: Henry Yule and A.C. Burnell, Hobson-Jobson (1886), William Crooke (ed.), Munshiram Manoharlal Publishers Pvt. Ltd, New Delhi 4th edn, repr 1984"

最近、東京でも南インド料理を提供するレストランが増えてきた。南インド料理と効いて、ピンと来る人はそれ程多くないだろう。日本のみならず、世界では、インド料理といえば北インド料理のタンドール・小麦粉・バターこってり系になる。南インド料理はお米であっさり系だ。シンガポールは南インド系のレストランが実に多い。今回作ったのは、南インドのティフィン(Tiffinと書くが南インドではティファンと読むが、シンガポールではティフィンと呼ばれている)の代表であるドセイを作った。ドセイ・トセイ・ドーサ・ドサイ、と読み方は様々だが、シンガポールではドセイが一般的だ。インディカ米・ウラド豆を水に浸してブレンダーでピューレし(フェヌグリークというインドでは一般的なスパイスを少々風味の為に足す)、一晩暖かいところで乳酸発酵させる。そうすると、ほのかな酸味のあるクレープに似た生地が出来上がる。これをクレープのように鉄板で焼きます。オーソドックスな付け合せはサンバー(トゥールダル豆と野菜のスパイシーなスープカレー)と数種類のチャットニーだ。今回はココナッツチャットニー、ミントチャットニー、そしてオニオンとチリのチャットニーを作った。これらをドーサと一緒に食べるのである。本当に旨いぜ。その他の代表的ティフィン料理は揚ドーナッツのようなワダ、蒸パンのようなイドゥリー、お好み焼きのようなウッタパム等がある。ちなみにティフィンはイギリス英語のtiffからきており、間食するを意味するHenry Yule and A.C. Burnell, Hobson-Jobson (1886), William Crooke (ed.), Munshiram Manoharlal Publishers Pvt. Ltd, New Delhi 4th edn, repr 1984。

Sambal Brinjal & Sambal Udang



先日、海南鶏飯食堂・麻布店の秀年と茄子のサンバル炒め(Sambal Brinjal)とエビのサンバル炒め(Sambal Udang)に挑戦した(前回はエイヒレのサンバルイカのサンバル炒め)。サンバル炒めは結構シンガポールのあらゆるレストランで注文する事ができるが、全て同じ味ではない。とにかく色んなサンバルソースが存在する。共通点は唐辛子が入るスパイシーなソースというところだけだろう(ソースだけだ無く、付け合せのディップもサンバルと言われている)。ブリンジャルは茄子を意味する。ウダンはマレー語でエビを意味する。茄子のサンバルソースは干しエビがアクセントとなっていて、サンバルに独特なコクがプラスされてみずみずしい茄子に良くマッチしている。一方でエビのサンバルはタマリンドの爽やかな酸味とココナッツミルクのコクをプラスし、東南アジア料理らしい一品だ。

Kiam Chye Ark 咸菜鴨湯 @ Leng Heng E. Coast Lagoon Food Village


シンガポールの潮州料理の定番スープは肉骨茶(バークッテー)だけではない。キアム・チャイ・アーッ(Kiam Chye Ark)も抜群に旨いが、肉骨茶屋ほど売っている場所が限られている。ちなみにペラナカン料理のイティック・ティムによく似ているという事は前回述べた。ホロホロに煮込まれている鴨のもも肉、これでもか!というくらいに入っているKiam Chyeとアクセントのトマトが絶妙な酸味をスープに加えている。グツグツといいながらクレイポットで出されてきて、私はこれをホフホフいいながら食べる。スープというよりは鍋料理だ。スープの味の奥深さに脱帽だ。イーストコースト・ラグーン・フード・ビレッジへ言ったら、是非試してほしい一品だ。

Kiam Chye 咸菜

一番上の写真がシンガポールの市場で売られていたキアム(キャム)・チャイです。塩漬け野菜と書いて(咸菜)潮州語でキアムチャイと読みます。本来は潮州の食材ですが、シンガポールでは定番の漬物で、スープに入れたり、炒め物に使ったり・麺の具になったりと大変良く使われるの食材です。主に潮州料理に使用しますが、福建料理・ニョニャ料理・ユーラシアン料理にも出てきます。肝心な味のほうなのですが、高菜に非常に良く似ていますが、そのままで食べるととにかくショッパイので水に浸けて塩を取り除く必要があります。このキアムチャイの元の野菜は英語でマスタードキャベージ、日本語ではからし菜。キアム・チャイはアジア食材屋で缶詰で購入可能‐2番目の写真。

Kiam Chye (pronounced kiam chai), also known as salted-pickled mustard cabbage is of Teochew origin however, in Singapore, where all the races come together, kiam chye is used not only in Teochew cuisine but I have also witnessed them in Hokkien, Hainanese, Peranakan and Eurasian cuisine -an ingredient which has no borders. I've always wondered but this kiam chye, doesn't it sound like kim chee? Although the chinese characters differ kiam chye (咸菜) and kimchee (沈菜) and approximate translation kiam chye -salted vegetable and kimchee -sunk vegetable. I shall look into this further.... to be continued. By the way, what does kiam chye taste like: since it is salt-preserved, you need to get rid of excess salt by soaking in the water for half an hour. The flavor resembles takana-a Japanese pickle with a slightly tangy note and simple mustard cabbage flavor (since what's basically used is only salt just like sauerkraut). Not as cabbagy as sauerkraut but slightly similar.


Itik(itek) Tim: Duck Soup with Kiam Chye

イティック・ティム(Itik Tim)は鴨肉・キアム・チャイ(Teochew salted vegetable)・トマトの深みとさわやかな酸味のあるスープ。時にはタマリンドや梅干(sour plum・咸水梅)が入るときもある。通常は鴨もも肉を使用するが、今回は出汁が直ぐに出る、鴨ミンチ肉を使用。スープのベースは豚足で、最後にパクチーと揚げネギをトッピング。イティックとはマレー語で鴨を意味する。ティムはダブルボイルしたスープを意味する。ダブルボイルとは二回ボイルするという意味ではなく、一回スープを拵えたものを個別のスープボウルへ入れて、蒸器に入れる(広東風)事を意味する。 余談だが、シンガポールにはユーラシアン料理(現地料理とポルトガル又はオランダ又はイギリス料理とのフュージョン料理)がある。ティームとティム、発音が良く似ていて偶然に思えない。しかも、ティームスープに入るものは豚足・キアムチャイ・干梅(キャム・ブエ)と良く似ている。ただ、ティムは福建語で蒸すor Brewという意味だが、ティームはポルトガル料理の名前だ。ただ、ユーラシア料理のティームスープとポルトガルのティームという料理は全く別物とされている。という訳で、意味は違えど、ユーラシア料理のティームスープはノニャ料理のイティック・ティムに影響されて出来たスープと云われている。イティック・ティムはシンガポールで食べられる潮州料理・キアム・チャイ・アーッ(Kiam Chye Ark)と良く似ている。様々なレシピを見た結果、私には違いがわからないが、ただItek Timはペラナカンの人々が特に旧正月に食べる、めでたい料理である事。豚足をベースにするところやトマトを使うところは、ポルトガルの影響ではないかと言われているて、キャムチャイと鴨を使うところは潮州の影響ではないかとされている。

Itik (Itek) Tim is a peranakan dish of Teochew origin (I hypothesize). Basically, this dish is pork stock based robust soup with duck leg, salted-pickled mustard cabbage (kiam chye) and/or tomato, tamarind, sour plum. Although I made the initial stock with pork trotters, I have used minced duck for quick flavored soup -simply make meat balls out of it, since it takes time to braise duck leg (and a little bit fatty and too much duck fat yields crapy flavor). The kiam chye needs some soaking since it is quite salty. The richness from pork and duck together with sour note from mustard cabbage and tomato is out of this world! A soup for the soul, indeed. Give me a bowl of steamed rice!

Media Exposure



知人であるシンガポール人の美食家Mr.Wが私にこう質問してきた:「君のレストランはいったいどのようなメディアを通じてお客様にアピールするのだ?」「海南鶏飯食堂のポリシーとして、メディアに出ないし宣伝もしないが我々の哲学を発信できるホームページならある」と答えたら彼はびっくりしていた。たしかにシンガポールにはホーカーのストール(お店)を評価するメディアが無数存在し、それらの記事や賞を誇らしげにお店の前に貼り付けている。特に有名店にいたっては、お店がそれで埋まりつくすぐらいだ。もう少しファサードを大事にしたほうがいいのではないか?と思う。ミシュラン的基準のあるホーカーガイドのMakansutra, タクシーの運転手や視聴者が基準のグルメ番組のYummy King, 商業案内のGreen Book, ストレートタイムズの記者がやっているLife!Eats, 等が代表的なメディアだ。一般的にシンガポールの人たちはこれらのメディアを美味しいお店の判断材料としてみている。もちろん口コミもあるが、近年増加傾向にある日本でいうコンビニ的なフードコートが若者の舌を台無しにしていると私は考える(あくまでも一般論だ)。味がフードコート基準になってしまうと、おいしいものを自分で判断できなくなってしまうのではないか? 例えば旨いチキンライスの定義とはなにかを理解していないとその美味さは語れない。判断できないので、やはり、お店の前に張ってあるものやガイドを頼りにしてしまう。一方で、3Kで職業として若者にまったく人気がない今後減少するであろホーカーのステータスをMakansutraは上げているのも事実である。

Nonya Chap Chye & Acar

ノニャ風チャプ・チャイ(aka Char Chap Chye or Stewed Mixed Vegetable)を海南鶏飯食堂・麻布店の調理担当・大橋が作った。ちなみにシンガポールでは、チャップ・チャイとは上の写真のような一品料理でもあり、チャプ・チャイ・ライス(写真下)という数種類の惣菜をライスと一緒に提供するホーカー料理の一つでもある(エコノミーライス又は経済飯又はエコノミーカレーライス等、様々な言い方がある)。ノニャ風チャプチャイは春雨・どんこスライス・海老・木耳・キャベツ・乾燥金針菜・湯葉が主に入り、味付けの決め手となる調味料はタウ・チオー・豆醤(味噌のような調味料)だ。味はシンプルだが、どんこ・海老・キャベツの出汁がタウ・チオとよくマッチしている。余談だが、春雨を使う料理なので、韓国料理のチャプチェ(Chap Chae)やアメリカンチャイニーズのチョップスイ(Chop Suey)と歴史的な共通点があるのかもしれない。

ノニャ料理を食べる時に欠かせないものが二つある。一つは赤唐辛子とブラチャンで作ったサンバルブラチャンというクセのあるチリソース。もう一つは漬物のアチャ-だ。ACARと書いてアチャーと読む。主に、きゅうり・にんじん・キャベツ・大根をいったんお酢で下茹でし、チリ・ゴマ・ピーナッツで和えて漬け込む。
Chap Chye (pronounced chap chai) not to be confused with chap chye rice, is a dish with mixed vegetables and glass noodles. On the other hand, chap chye rice is not a dish per se but a type of food where you choose various meat and vegetable dishes with rice(2nd photo), also known as economy rice or economical curry rice, etc. The nonya chap chye is composed of glass noodles, prawns, wood ear mushroom, tau kee (bean curd skin), dried lily buds, dried shiitake mushrooms and cabbage. Nice stock from dried shiitake, prawns, and cabbage with tau cheo as a main seasoning is absorbed by glass noodles -yummy. Also, when one speak of Nonya meal, acar pickles (pronounced achar) is definitely a must, together with fiery sambal blacan chilli sauce. Bak Chor Mee (Soup Type) @ Joo Heng 裕興




I've already written about bak chor mee -dry type, this one at Joo Heng (Ang Mo Kio 紅毛橋 Yio Chu Kang Market and Hawker Centre) is the soup type. Long queue, at around 9:00 am on weekdays. Rather ordinary clear pork broth (I chose mee pok), with minced pork, braised shiitake mushrooms. The garnish here is rather simple cuz, usually, if you order bak chor mee, you'd get pork balls, sway gao, sliced pork, etc. Oh well, I think this bak hor mee is for hangovers.

Nasi Briyani @ Famous Islamic Restaurant




August 1, 2008 I happened to have a Schezuan fish head steam boat at North Bridge Rd. and right near the restaurant, to my surprise, I found out that the legendary Famous Islamic Restauant -established 1921, famous for it's nasi briyani, has been demolished. And yet again, what's da matter with these people -destroying historical restaurant with no mercy! (Iam sure they had reasons but as you could see from my photos, the decor was just too charming...) Last year, I was fortunate enough to go to this restaurant and I was truly dazzled by its decor and its heritage (inside is like a museum). I've always wanted to go to this restaurant, famous for nasi briyani and also it was a historical restaurant which spread this delightful nasi briyani (top photo) and North Indian cuisine. I have ordered mutton nasi briyani -came with aromatic briyani rice, dalcha (mutton & lentil curry), acar pickles and tomato-cucumber salad. Nasi Briyani is a one meal dish where the rice is infused with spices like cardamom, bay leaf, cloves, cinnamon, saffron, rose water, mint leaves, yogurt and mutton in one single pot.
またしても、歴史的なレストランが崩壊だ。創業1921年、ナシブリヤニをシンガポールに広めた歴史的なジャラン・サルタン(Jalan Sultan)エリアにある、老舗レストラン(フェイマス・イスラミック・レストラン North Bridge Rd.)が今回の旅行で無くなっていた。昨年、初めて訪れた時、ナシブリヤニの味に感激したと同時に、歴史を感じさせるレトロな内装に鳥肌がたった。味のあるお店は10年ー20年では出来ないだろう。経営的な問題かは定かではないが、誠に残念で悲しいかぎりだ。そのユニークな店内を写真に撮っておいて正解だった。今後は、こういった歴史のあるレストランの内装やフードセンターの写真は絶対に残しておこう。

Cze Char @ Joo Heng (Joo Chiat Rd) 裕興菜館







July 5th, 2008 while strolling down Joo Chiat Rd -a gourmet street in Singapore's historical Katong area, I discovered that my favorite cze char Cantonese restaurant Joo Heng has been renovated into this classy modern decor eatery. The place used to be a non-aircon canteen with a retro-nostalgic feel, but now, a stylish restaurant. What's the matter with these people? The old-school canteen ambiance has been demolished and hence what I have highly regarded as valuable are gone forever! The problem is, you simply cannot can't replicate that kind of design even if you have loads of money. Design for convenience / comfort does not necessarily imply better, they should understand that. Pass it onto the next generation but pass on the true essence as well. Sigh..... Pics from top: 1. beautiful facade before renovation, 2. stir-fried beef with peppers and black beans, 3. steamed fish head, 4. baby squid with ginger and oyster sauce, 5.water mimosa with sambal, 6. prawn paste chicken wing, 7. steamed pork with salted fish. The dishes here were extremely tasty, one could eat loads of rice non-stop.
シンガポールには広東系のレストランでズィーチャー(ズーチャー・ジューーチャオ・煮炒)を出す店がたくさんある。おかづ系がたくさんあり、まさにご飯と一緒に食べる料理だ。シンガポールらしいところは、おおくのズィーチャー屋はサンバルブラチャン(エビ醤・赤唐辛子・ライムジュースのソース)があるというところだ。シンガポールの加東エリアはペラナカンエリアで歴史的に非常に見所のある場所だ。そのエリアのジューチアッ・ロード(Joo Chiat Rd)といえばあまりにも有名だ。おいしいものも沢山ある。私の好きな煮炒屋:ジュー・ヘンはそこにある。写真上から:当時のファサード、牛肉・赤ピーマン・ニガ瓜のトウチ炒め・スティームフィッシュヘッド(なんかお味噌を塗って蒸した感じ)・空心菜のサンバル炒め・小イカのオイスターソース・蝦醤でマリネした手羽先揚・蒸豚挽肉とハムユイ。どれもライスとの相性抜群で箸が止まらない。しかしだ、2008年7月5日にここを通ったら、なんとお店がリニューアルされているではないか!しかも店内はすごくモダンなダイニングと化している!エアコンもなく、天井のファンが心地よい風を送り出していた店内。なんともいえないレトロな食堂の雰囲気はもうどこにもない。歴史が作り上げた素晴らしいデザインを簡単に破壊してしまうとは、悲しい限りだ。2代目の仕業なのか?当時の写真を撮っておいて良かった・・・

How to Make Roti Prata 印度煎饼 -Video

Indian Rojak 印度囉喏 @ Saji's Indian Food

インディアンロジャッで最も有名なお店はブギスジャンクション(Bugis Junction)から歩いて直ぐのウォータルーストリート(Waterloo St.)にある。その名もSaji's。インディアンロジャッの説明はコチラ。マカンスートラレジェンドの一つ、シンガポールで最も美味しいとされているインディアンロジャッに挑戦。6年前ここを訪れた時はその味に感動はしなかった。当時まだ未熟な私の舌は、この料理の魅力の理解に苦しんだ。今回の感想:まーまーだ。小エビのかき揚・ワダ・キャベツとチャナダルのかき揚・烏賊の煮込みを自分でトングで取って、おやじに渡すと、細かく切ってくれて、キュウリ、エシャロット・グリーンチリと一緒に和えてくれる。尚、お店の前には無数の揚げ物が陳列されており、好きなものを選ぶのだが、3つか4つくらいにしておかないと、とんでもない量になる。ひとりでは食いきれない。ディップ(またの名をクア)はチリとサツマイモで出来ており、ほのかにクミンの味がする。入っているのかは不明。
My description on Indian Rojak click here. Saji's at Waterloo Street is without a doubt the most famous place for Indian Rojak in Singapore. Apparently, the dip a.k.a. kuah, made from chillies and spices, thickened with sweet potato is what sets this place apart from all others. This is one of the food that I categorize as "what makes this dish so darn good." The crispy-fried items dunked into the sweet sauce, why sweet sauce? Does it really complement/enhance the flavor of the deep fried items? I'd rather much prefer sprinkling a mixture of good salt and ground cumin with lemon wedge -I know, very Japanese. Other alternatives which I prefer will be mint/coriander chutney, tomato chutney, coconut chutney.

Singapore Indian Food Galore 3: (Mamak) Mee Goreng

前回ミーゴレンについて語りました→コチラ。シンガポールでミーゴレン(mee goreng)といえば、インド風が主流だが、マレー風と中華風も存在する。ナシゴレン(nasi goreng = 焼き飯)と全く同じ感じだ。 ミー=福建語で麺そして、ゴレン=マレー語で炒める又は揚げる。もちろん、インドにヤキソバなど存在しないが、シンガポールでは主にムスリム系インド人(mamak=ママッ)のお店でインド風ミーゴレンを食べる事ができる。具は各お店で違うが、オーソドックスなのは、マトンミンチ・トマト・キャベツ・ジャガイモ・グリーンピースをトマトベースの甘いソースで調理する。同じ具を使い、ご飯と炒めると、インド風ナシゴレンとなる。プテ(Puteh / Putih)といえば、トマトソースを抜いて仕上げてくれる。時には、マトンミンチでなく、煮干(イカン・ビリス=Ikan bilis)を入れるところも少なくない。シンガポールは麺をスプーンとフォークで食べるケースが多いので、食べやすくするように、麺が凄く短くきってあるのが特徴だ。
Having eaten at one of the legendary Indian Style Mee Goreng at Old Satay Club, I decided to give mee goreng a try and bring it up a notch. The garnish is basically minced mutton, tomato, cabbage, potato, green peas and scrambled egg with a tomato-chilli based sauce. I've added some chopped dried prawns and hint of some indian spices for the extra oomph. It's actually interesting that whenever having Indian style mee goreng, the noodles are chopped into pieces so that one could eat it with a spoon -very Singaporean.

Singapore Indian Food Galore 2: Homemade Roti Prata 印度煎饼


ロティパラタ(プラタ)はインドに存在しないシンガポール料理だ。ちなみにマレーシアではロティチャナイ(Roti Canai:マレー語ではCをチと発音するのでロティカナイではない)と呼ばれている。余談だが、チャナイは南インドの旧マドラスであるチェンナイから来ている(Chennai)。というのもマレーシアではロティチャナイの付け合せのカレーは豆で出来ていて、この豆カレーがチェンナイ風という事から、ロティチャナイと呼ばれる用になったそうだ。私の推測だが、この豆カレーはサンバル(Sambar)ではないかと考える。何故なら、南インド料理を代表する豆カレーだからだ。ロティチャナイとは別に、シンガポールではロティプラタの付け合せのカレーは豆ベースではなく、主にマトングレービー又はチキングレービーが主流だ。このグレービーはジャガイモと一緒に長く煮込み、独特なトロミがある。私が現地で撮影したロティプラタの実演ビデオはコチラ。さて、ロティプラタだが、この言葉自体シンガポールにしか存在しない。ロティ(Roti)はウルドゥー語、そしてプラタ(Prata→Paratha)はヒンディ語で、面白い事に全く別の言語を合わせている。ロティもプラタもインドのチャパティ同様、フラットブレッド(Flat Bread)を意味する。大体のロティプラタ屋は小麦粉を主食とする、ムスリム系のインド人がやっている。ちなみに、ロティチャナイは写真下(ペナンのとある有名店のロティチャナイ)、すでに豆カレーが添えてあるというより、ぶっかけになっている。

It's hard to find a good recipe for Roti Prata (印度煎饼)-Singapore style flatbread with curry gravy made from mutton or chicken. Demo on making roti prata click here. When I visited the Singaopre National Museum, they had an exhibition on Singapore heritage food and there was something very interesting what they said about roti prata. Roti is a Urdu word in origin and Prata, coming from the word paratha, is Hindi in origin, both meaning flatbread. They failed to explain why Urdu and Hindi word for flatbread combined together though. In Malaysia it is called roti canai (pronounced chanai). It is called canai, because the gravy that comes along with roti is legume based and it's south Indian in origin, namely, canai = Chennai from state of Tamil Nadu. So perhaps this legume based curry is Sambar -most widely eaten legume curry made from lentils (Roti Canai pics 4th photo).

Singapore Indian Food Galore 1: Indian Rojak




ロジャッ又はロジャック(Rojak)には主に2種類存在する。チャイニーズとインディアンスタイルだ。チャイニーズスタイルは厚揚、ユーチャークエ(油炸鬼)、パイナップル、胡瓜などをヘイコー・ピーナッツ・ライムジュース・砂糖(Gula Melaka)などで作ったドレッシングで和えたものだ。チャイニーズだが、中国には無い料理だ。ヘイコーとライムジュースを使用するところが、マレー料理の影響を感じる。まず、ロジャッとはどういう意味か?ロジャッはマレー語でmixed-up(ごっちゃ混ぜ)という意味だ(材料をまぜまぜするところからその名が付いたとされている)が、サラダと解釈してもよい。料理の歴史はシンガポール国立図書館のアーカイブによると不明。なお、シンガポールでロジャッといえば、チャイニーズロジャッを意味し、インド風のはインディアン・ロジャッと表現しなくてはならない。基本的にロジャッはチャイニーズとインディアンでは料理的に全く別物だ。ちなみに、インディアンロジャッはインドには存在しない料理で、シンガポールのオリジナル料理だ。しかし、ペナンでは、パセンブール(Pasembur又はmamak rojak)として存在しほぼ同じ料理といえる。インディアンロジャッを今回テストした。まずは揚げ物を数種類用意する:チャナダールとキャベツのスパイス揚げ、桜海老と人参で作ったワダ、そして、ココナッツフレークと干しエビで作った揚げ玉。これらを、一口サイズに全てカットする。ちなみに、衣は主にベッサン(bessan=ヒヨコマメの粉)を使用した。最もベーシックなトッピングにはスライスしたグリーンチリ、胡瓜の千切り、タマネギのスライス、厚揚、ジャガイモ。唐辛子・スパイス・サツマイモ・タマリンド・砂糖で作った甘ったるいディップと一緒に食べる。
There's rojak (Chinese) and then there's Indian rojak. Rojak means mixed-up and it is also a generic term for salad. Singapore boasts variety of Indian food which does not exist in India and Indian rojak is one of many (although I wouldn't categorize Indian rojak as a salad -more like a snack whereas, Chinese rojak is a veg/fruit salad tossed with special sweet-sour dressing). Come across an Indian rojak stall, you'll learn that there are wide range of deep fried items, fish cakes/balls, and soy-bean items. You just pick the pieces you want and the stall owner will re-fry them, cut into pieces and toss with boiled potatoes, topped with sliced green chilli, sliced shallots and cucumber. It comes with a dip made from chillies and sweet potato. Although there's a use of chillies in the dip, it is not spicy (mainly for colour) but dip tastes sweet. This time round, I made 3 types of deep-fried items: 1. chana dahl and cabbage with fennel and cumin seeds, 2. coconut and dried shrimp, 3. small whole shrimp with sliced onions. Cut them up into bite-size pieces and topped them the basic garnish. And yes, made the sweet potato dip from scratch.
