Nasi Padang

ナシパダンはシンガポールを代表する料理である。20種類−40種類ものおかずを自分で選び、ご飯とサンバル(唐辛子の付け合わせ)と一緒に食べる。その数多くあるおかずにはシチュ、カレー、焼き物、揚げ物、サラダとその調理法もバラエティに富んでいる。通称ナシメラユ(Nasi Melayu)とも呼ばれている。マレー語でナシは飯そしてメラユはマレーという意味ですなわちマレー飯。ちなみにパダンはインドネシアのスマトラ中西部にある場所である。なぜナシパダンがナシメラユとも言われるのか?ほとんどのナシパダン屋はマレー系のシンガポール人が調理しているからである。マレーシアがイギリスから独立するまで、貿易の中心であったパダンからミナンカバウ(Minangkabau)の人々がマレーシアとシンガポールに移住した。そして現地に合ったナシパダンを料理し、進化させて来た。パダンへは行った事がないので判断しかねるが、シンガポール人のグルメはマレーシアとシンガポールのほうがオリジナルよりお気に入りのようだ。味付けに違いがあるのと食材の鮮度が違うという事だろう。ちなみにナシパダンに使用しているライスはなんの品種なのか気になる。フワッフワで通常のライスよりも軽い(重量的に)し、よくソースを吸収してくれる(写真下)。

Banana Raja -Banana for the Kings, Goreng Pisang 炸香蕉


Banana that's fit for the kings, aka banana raja is a mind blowing banana.  When heated at the right temperature with right amount of time, it becomes meltingly tender, like a very ripe avocado.  When things are extremely tender, you would want a texture that complements it.  So what else but goreng pisang?  The deep fried crust is crisp and the inside is heavenly tender.  The deep fried crust soaks up some of the aromatic elements from the palm oil like you char kway.  Any shop that sells deep fried item, you need to buy/eat it when the shop opens because the oil is fresh.  At Maxwell Road Food Centre, Lim Kee is incredibly delicious and I think the secret is the crust and the fresh oil they use, and of course the main ingredient banana raja is just top notch quality.  Other than goreng pisang, I also like this banana inside roti prata but the banana has to be chopped just right for ultimate satisfaction.

シンガポールにはいままでかつて味わった事のないバナナがある。味というよりは「食感」といったほうが正しいかもしれない。バナナ・ラジャ=王様の為のバナナといわれているこのバナナは主に火を通した料理に使われる。その代表がゴレンピサンという揚げバナナだ。ヤシの油で揚げるこのスナックはほのかに甘いヤシの香りとサクサクッとした衣、そして最高に熟したアボカドのような食感を持つバナナラジャ。甘いものが苦手な私が思わず唸る!どんな手の込んだデザートより好きだ。このバナナはロティプラタに入っていても旨い(蜂蜜を掛けて)。

Vegetable dish at Ng Ah Sio Pork Rib Eating House 黄亞細肉骨茶餐室


Ng Ah Sioの肉骨茶屋へ行くと必ず、店員さんからがベジタブールとシンガポールアクセントで
必ず進められる一品がある。いつも頼むのだが実際なんの野菜かというのを不覚にも訊いた事がなかった。今回はじめてなんの野菜かをきいてみたところ、これはTurng-wo(トゥンクゥォ)筒蒿という野菜だそうだが、空心菜やカイランのようにどこにでも買える野菜ではない。味は本当に目隠しで食べたら、クセのないマイルドな春菊のような味と食感。あっさりした豚の出汁で程よくゆでられた、まちがいなく筒蒿は旨い。マーケットで筒蒿をやっとの思いで発見したが、葉は春菊よりもヒラヒラの部分が丸くなっている。外見は少しルッコラに似ているかもしれない。

Whenever I visit Ng Ah Sio at Rangoon Rd. for a bowl of bak kut teh, the staff always always, ask everyone for a vegetable or a mushroom dish.  And I usually end up ordering either or both of the dishes.  I know that the mushroom served there is a type of young shiitake mushroom but I have always wondered what the vegetable was.  Until now, I have never asked them what vegetable they were using.  Apparently, the vegetable is turng-wo(筒蒿)which in Singapore I have never come across.  I went to the market but not all the stalls sell this vegetable like kailan or kangkong.  The flavor is somewhat herbal (perhaps I could call this an asian arugula) and in Japan, we have a very similar tasting vegetable known as shungiku (used for tempura, hotpots and sukiyaki).

Ng Ah Sio at Home 黄亞細肉骨茶餐室


The famous bak kut teh place at Rangoon Rd. the "Ng Ah Sio" has been somewhat updated recently which was quite a surprise for me because they never change.  Although famous around the globe(?), it had that mom&pop feel to this bak kut teh place -very down to earth.  Now they have incorporated the high-tech ordering system -uncle using the wireless digital pad.  They've even come up with a bak kut teh spices for sale (I think for tourist) and of course I had to buy one.  No, they don't sell one only, it had to be a box of ten packets and if my memory serves well, they charged me $30 for 10 packets.  They still do sell a pretty mean bak kut teh though -the ribs were more tender than usual.  If the "you char kway" is a little more aromatic with palm oil, I kinda like it.

私が20年以上も通い続けている、肉骨茶(バクテーではなく、バックーテー又はバークーテーだ)がリトルインディアの近くにあるラングーンロードにある。その名もグ・ア・スィオ・ポークリブ・イーティングハウス。隣が大きな公園という事でとにかく開放的な空間でバックーテーが多ベられる。ついこの間、訪れた時びっくりしたのが、オーダーが全てタッチパッドのワイヤレスオーダーシステムを導入していた事だ。そしてなにより、更にビジネスに走っているのか、お店専用のバックーテースパイスパックを販売している。2代目は色々な事に手を出しているのかどうかわからないが、お店にはいなかった。

Kiam Chye 咸菜


キアムチャイ(Kiam Chye)の原型のマスタードグリーンをマーケットで初めて見かけました。キャベツっぽい野菜ですが、これを塩漬けして発酵させるとKiam Chyeになるのですね。韓国のキムチより手間が掛からない分、これなら自宅でぬか漬けのように出来ると思うのですが。キアムチャイを塩抜きして、シンプルに煮込んだも(foto2)のが潮洲モエ(Teochew Muay=テオチュウ粥)にはかかせない付け合わせとなります。少し甘辛く煮込んだもの(foto3)は肉骨茶に最適。

I've never seen the real vegetable before kiam chye.  I found that mustard green at the market.  It sort of looks like cabbage.  So, brining this with salt and fermenting it would yield kiam chye I suppose.  It does seem quite simple to make compared to Korea's ubiquitous t'ong paech'u kimchi -napa cabbage chili kimchi.  I wonder how many of the household in Singapore still make kiam chye from scratch.  My  mom still makes japanese pickles (pickled in fermented rice bran) by herself and I used to make pickles as a kid.  Anyways, this braised kiam chye (2nd foto) is a perfect condiment for Teochew Muay and Bak Kut Teh.

See Hum, Blood Cockles 鮮蛤 赤貝 


シンガポールだけではないが、東南アジアには少し小ぶりの(3cm)赤貝が流通している。シンガポール市場のものは殆どマレーシアからの輸入だそうだ。福建語ではスィーハム、英語ではブラッドコクルズと現地では呼ばれている。日本で鮮度の高い赤貝を食べると、ローカルのものはどうしても生臭くてだめだ。ラクサ(2枚目写真:加東ラクサ@Famous 49 Katong Laksa)やチャークエイティオウ(3枚目の写真:Outram Park Fried Kway Teow Mee)に主に入っているが、ちょうどその温度(人肌)が生臭さを倍増させているに違いない。ただ、その生臭さがクセになるというのはわからないでもない。シンガポールでは半生の赤貝がチャークエィティオウやラクサに入っていないとだめだというマニアックは少なくない。ちなみに、シンガポールでは、赤貝処理の規制が2007年5月からAVA(Agri-Food Veterinary Authority=日本でいう保健所)監視のもと厳しくなっている。A型肝炎やコレラが大きな原因で消費者にとってはより安全に赤貝が食べれるようになっている。この小ぶりの赤貝は東京・上野のアメ横センタービル地下一階の生鮮売場で売っているのを見た事がある。

Epok Epok Sardine (Sardin) Telur @ 786 Merpati Puti


Which came first, epok epok or curry puff?  In order to find the true facts, I need to go to great lengths to find the information.  I do utilize the National Library but most of the time, my questions aren't answered but I end up with more questions (which is a
 good thing).  Someone has to publish a book on "Historical Dictionary of Singapore Food."  Perhaps Makansutra could do something about it, if they want to boost the dying hawker culture -preservation based on true facts are necessary and they will form as a foundation of true food culture.   So, I had the epok epok which is basically, stuffed deep fried dough like the samosa of India.  Geylang Serai temporary market (wet market for the malays) has a lot of stalls that sells epok epok and curry puff.  I purchased the one which Makansutra recommended since I do not have any information whatsoever on epok epok -786 Merpati Puti (which could be translated as white pigeon -good luck?)I ordered the one with canned tomato sardine (pics below) and boiled eggs.  The dough is nice and crisp and the stuffing, you can't go wrong.  It sort of resembles a Sicilian dish if you add some fennel seeds or chopped fennel or even olives and capers.  Actaully, this epok epok is so versatile you could basically put anything in it so long as the outside is nice and crisp.  Just a thought:  lots of malay term repeat itself don't they?  Like epok epok, otah otah and onde onde.  Can't these dishes be simply called epok, otah or onde?  I find it very interesting.  

シンガポール・マレーシアにはエポエポというサモサのようなスナックが存在する。カリーパッフとは違う生地でできており、バターやマーガリン風味が強いカリーパフに対してエポエポの生地はどちらかというと、揚げ餃子的な生地となっている。言葉で表現するのなら、エポエポはサクッとカリッと、そしてカリーパフはサックサクだ。缶詰めのトマト鰯煮込み(写真下)ゆで卵が入っているシンプルな具だが、どことなくシチリア料理っぽい。これにウイキョウや刻んだ黒オリーブを足せばまさしく地中海だ。786メルパティ・プティはマレー人がたくさん訪れるウェットマーケット:ゲイランセライにある。ちなみにメルパティは鳩でプティは白という意味だ(幸福のエポエポなのか?)。

Kacang Phool

今まで、シンガポールで見た事もなかったが、某シンガポール料理のウェブサイト編集長が、これは食べるべきだといわれさっそくカチャンプールというものを食べた。これがまたメキシカンっぽくて凄く旨い。プールの意味はいまだに不明だが、カチャンは豆という意味だ。ようするに、豆をひき肉とスパイスで煮込んで(チリコンカルネのようだ)、刻んだグリーンチリとタマネギ、そして目玉焼きを添えてシンガポールのバゲットと一緒に頂く。カラマンスィライムをたっぷり絞っていただく。ちなみにシンガポールのバゲットのクラストは少し柔らかく、フランスのものとは別物だ。日本のタコライスのように刻んだレタスとトマトを加えても旨いと思う。夜食に最適だ。

I've never eaten kacang phool before or even heard of it, but one of my friend suggested to try this Malay dish.  I thought this was kind of like a Mexican flair because the broad beans are stewed with spices (coriander powder and touch of cinnamon) and minced meat.  They are garnished with chopped green chili, onion, fried egg and kalamansi lime wedge.  It is sopped up with Singaporean style baguette which is not like the traditional French baguette but more chewy.  Kacang (pronounced kachang) means beans in Malay but I cannot figure out what phool means (it was not in the dictionary), although it means some kind of flower in Hindi?  Great midnite snack!

Curry Puff (Curry Pup) 咖哩角 @ Wang Wang Crispy Curry Puff


シンガポールの至る所で購入できる国民的(?)スナックであるカリーパフ(Curry Puff)通常、パイなどに使う、ショートクラスト生地でカレー風味のジャガイモ・キャラメライズドオニオン(飴色にじっくり炒めたオニオン)とチキンが入っているのが定番だ。その他にも鰯のトマト煮込缶詰・ゆで卵の入っているものや黒胡椒が効いたものもある。どちらかというと、インドのサモサに似ている。通常はオーブンで焼き上げるのだが、お店によっては(シンガポール中にあるチェーン店・Old Chang Kee)揚げているところもある。ここOld Airport Rd. Food CentreにあるWang Wang Crispy Curry Puffは店名の通り、ショートクラスト生地ではなく、どちらかというとサクサクの軽めのFlakey Doughを使用。具はオーソドックスだがクロワッサンのような歯ごたえは他とは全く違う食感だ。生地は中華パイ生地のリンナンスゥピー(嶺南酥皮)のようだ。

Chatterbox


今までメリタスマンダリン(Meritus Mandarin Orchard Rd.)の一階にあったあの有名なChatterboxはトップフロワーの38・39階へ今年の夏移転した。実に7年ぶりに訪れるChatterboxは1971年からチキンライスを売りにしてきたお店で、シンガポールを知る日本人で知らぬ人はいないであろう。過去に移転する前は$16++(サービス料10%・消費税GST7%別途)で仰天価格だが、更にインフレも考慮して現在では$24++となっている。円高だからまだ良いがSG$1=¥80であれば¥2,200という恐ろしい価格になる。味のコメントは避けることにする。相変わらず24時間営業となっている。写真下は30年程前、マンダリンホテルの最上階にて弟の誕生日会をやった時の写真。高級洋食系のレストランだった。この30年でだいぶ代わってしまった。親父に効いてみたが、当時チャターボックスのチキンライスは大体5−6ドルだったそうだ。為替は今とはさほど代わっていない1ドル=70円代。当時のシンガポールの物価を考えると高い。確かコーラが20セントだったような気がする。When I first visited Singapore 32 years ago with my dad, I spent the whole month at Mandarin Hotel (now Meritus Mandarin Hotel), at Orchard.  Back then, there were only one of two towers facing Orchard and the top floor was an exclusive Western sytle restaurant (the other tower was under construction).  Chatterbox was located in the first floor (until this year) and we used to go there for lunch when we did not pay a visit to the hawker center (I loved there frozen thirst quencher).  Chatterbox chicken rice is not one of my favorite chicken rice as of now and at 24++ per person, it is indeed rediculous but 30 years ago, it was my gateway to Singaporean cuisine.  Lucky Plaza, Cuppage Plaza, Punggol seafood area, Newton Circus, Cold Storage are still good memories.  Now they are quite different like anything else for better or worse.

Rickshaw Noodles 拉车面



Rickshaw noodle as the name suggest used to be a noodle for man pulling the rickshaw.  By the way, rickshaw is a Japanese import (1880's) and the name comes from jin-riki-sha(人力車) -man-powered vehicle, but now that rickshaw is gone and trishaw has dominated.  From what I tasted, the soup base is ikan bilis, dried shrimp and full-bodied pork stock.  I say full-bodied because I noticed after having a sip, my lips were kinda sticky from the collagen (from bones).  Hokkien noodle is not al dente but stewed with the soup, absorbing all the nice flavors.  It is garnished with chye sim and crispy shallots and served with chili sambal and minced garlic with water?   The noodles are described in the food guide as Hokkien noodle but this is not the yellow type but more like japanese udon noodles.  Apparently, this dish is sort of a Henghua origin (middle of Fujian or Hokkien province).  It's not a dish where you can find everywhere and it is incredibly simple (humble) dish.  The price is very reasonable 70 cents a bowl.  7 years ago I had this dish at the same place (Maxwell Food Centre) and didn't think much of it but now I really like the dish, it's addictive.  Taste buds do change (mature) over time.

マクスウェル・フード・センターに昔からリキシャーヌードルを出すお店がある。その昔、人力車を引っ張っていた男たちが安くてお腹にたまるこの麺を食べていたことから名づけられ、60年代にはかなりポピュラーな料理だったそうだ。ちなみに、人力車は日本からシンガポールに1880年代に初めて輸入されたが、1967年には人力車が全面に禁止され、Trishaw(トライシャー)三輪車に代わったと記録されている。今でも観光目的でトライシャーはシンガポールで活躍している。さて、ここのリキシャーヌードルは2008年現在で一杯70セントと破格である。トッピングは揚げたねぎと小松菜に良く似た菜心(Chye Sim)。スープのベースは煮干し・干しえび・豚骨だ(と思う)。あっさりしているのだが、コクがある。ニンニク水(?)とチリサンバルをお好みで・・・この麺料理は色々調べていると福建省の中部のヘンフア(Henghua)が発祥となっているが、詳しくはわからずだ。

Singapore Airline Meal A380 II



シンガポールは様々な人種と宗教が共存している素晴らしい国だ。シンガポール航空のエコノミークラスでも多宗教&多国籍な機内食が事前予約で楽しめる。東京からシンガポール直行便の昼食にインドのベジタリアンミールを特別予約した。通常出される機内食でもいいのだが、なんだか特別な気分にしてくれる。この日出てきたのは、キドニービーンズのサラダとしっかりとサフランで炊いたバスマティライス。カレーは2種類あり、人参とグリーンピースのカレーとパラック(ほうれん草)のカレー。ナンとチャツネまで付いてきて本格的だ。しかも旨いので凄く得した気分にさせてくれる。さすがSQだ。食前酒には定番のシンガポールスリングを注文。帰りの便もムスリムのハラール機内食を堪能した。帰国便は夜中の為、あっさりしたもが出てくる。今回は、ホッケンヌードルにレモングラス風味の鶏ひき肉と野菜が入ったミーゴレンだ。味付けは悪くない。シンガポール航空は本当に機内食に力を入れている。

When it comes to airline meal, Singapore Airline is damn serious -even for economy class.  I've actually managed to book an Indian vegetarian meal in advance and the meal was quite superb -Nan and chutney, saffron basmati rice (wow), carrot and pea curry & spinach curry.  For an airline meal, it was excellent.  Oh yes, I started off with Singapore Sling as an aperitif.  Back to Tokyo, I had a muslim halal meal which was lemongrass scented chicken mee goreng -very original and appetizing.  Once again, bravo SQ!
