Kiam Chye and Kimchi

I have this wonderful book on kimchi: Kimchi, Thousand Years (Design House Publishers Inc. 1997) by Kim Man-Jo, Lee Kyou Tae, Lee O-Young and traslation by Gary Rector, ISBN: 89-7041-067-8. In my personal opinion, if one wants to know the A-Z of Kimchi, this is the best book ever written on kimchi. There is a chapter "The Origins and History of Kimchi" written by Kim Man-jo which states the etymology of the word kimchi. The author "believes it is derived from a combination of two Chinese characters meaning 'salted vegetables'... The Chinese character which means 'salted vegetable' is 鹹菜 (traditional Chinese)or 咸菜(simplified Chinese). The transition from 鹹菜 to 沈菜 is unclear. By the way 沈菜, pronounced "ch'mch'ae", is the proper Chinese character for kimchi to date.

キャム・チャイの発音がキムチに似ている事から、なにか共通点はあるのではないかと、私の食ライブラリーコレクションにあるキムチの歴史本: Thousand Years (Design House Publishers Inc. 1997) by Kim Man-Jo, Lee Kyou Tae, Lee O-Young and traslation by Gary Rector, ISBN: 89-7041-067-8をもっと詳しく読んでみた。共通点があると私は推測する。というのも、もっとも基礎的な食材の保存方法は塩漬けだからだ。ちなみに、キムチについてこれほど素晴らしい書物は他にはないであろう。キムチが大好きで、英語の読める人には非常にお勧めだ。さて、キャム・チャイは繁体字で書くと「鹹菜」又は、簡体字で「咸菜」と書きます。キアム・チャイの発音はそもそも潮州・福建語で、広東読みになるとハーム・チョイ。Dr. Kim Man-jo氏によると:「キムチという言葉の語源は(塩漬け=鹹)そして(野菜=菜)という二つの中国漢字(鹹菜)からきているのではないか」と推測している。しかし、現在キムチを漢字で書くと「沈菜」と書く。この本には、なんで「鹹菜」から現在の「沈菜」になったのかは明らかにしていない。そこがポイントだったりするのだが・・・う~む。
